I love to EAT and I do love to COOK just the same. Here’s my own version of pakbet (I don’t call it “dinengdeng” because it is sauteed). It’s not the usual pakbet being served in restos.
Kamote (sweet potato thinly cut)
Bungon/Alukon (Ilokano) /Ambabaay (Bolinao) (I don’t know how is it called in English or Tagalog)
Sitaw (string beans)
Hinimay na Isda (Debonned Fish)
Bawang (Garlic )
Sibuyas Tagalog (Red Onion)
Bagoong (Fish Sauce)
- Saute garlic, onion, tomato and fish until cooked
- Add all the other ingredients. Add malunggay, kamote and “alukon” first. Once half cooked, add sitaw, okra and ampalaya.
- Add fish sauce (bagoong) and allow to simmer.
- Add a cup (or more as desired) of water. Allow to boil until cooked.
